In Spain, tapas and wine are inseparable. But which wine goes with tapas? The good news: there are no strict rules. Yet a few proven pairings make the evening even better. Here are the recommendations from our wine lounge. The basic rule: the wine should accompany the small dishes, not overpower them. And since tapas bring many flavours to the table, it pays to vary the wines by the glass, too.
Hearty tapas like chorizo, lamb chops or beef fillet strips call for a bold Rioja or Tempranillo: the tannins stand up to the spiced meat without overpowering it. A medium-bodied Spanish red also works beautifully with grilled chicken skewers and köfte – ideally served slightly chilled.
A chilled Verdejo or Albariño accompanies vegetarian tapas, pimientos and mild cheese platters with fresh acidity and citrus notes. Also ideal with aioli and fresh bread. Important: serve white wine well chilled so its freshness carries through the whole evening. In Spain, tapas are traditionally accompanied by a dry sherry such as Fino or Manzanilla, an Andalusian classic.
A tapas evening may well begin with bubbles: Cava or a dry rosé open the palate and pair beautifully with olives, Serrano ham and light starters. And for dessert – a crema catalana, say – a glass of sweet wine or another Cava is a lovely finish.
It depends on the tapas. Hearty meat tapas call for a bold red, while vegetables, cheese and aioli love a fresh white. With a mixed table, there is no reason not to order both and taste your way through.
Besides wine, dry sherry such as Fino or Manzanilla is a classic companion, with Cava to start. A simple beer or a Tinto de Verano is completely normal in Spanish tapas bars, too.
